You may need a mobile kitchen to set-up in your location. Make sure it is complete with everything you will need, and the location allows you to cook in large quantities. The same goes for your dining area. Make sure it is an area conducive for enjoyment for your patrons.
WORK ON THE MENU
Patrons of pop-ups usually look for something very new, unique, and quite different from what normal restaurants offer. Because of its limited run and temporary nature, many pop-ups have fixed menus. It is as opposed to normal ala-carte menus of buffets.
DON'T FORGET THE PERMITS AND LICENSES
You may think since it is a limited run only, you do not need to work on permits and licenses. However, you will need to check with your city or state to make sure what the requirements are. You would not want to be in trouble for doing this. Consult with specialists on the requirements you will need.
